Poulet Rôti, or French roast chicken, is a classic dish that brings tender, juicy chicken with crispy, golden skin to your table. Perfectly seasoned and paired with herbs, this meal is both simple and elegant, making it ideal for both weeknight dinners and special occasions.
Ingredients:
- 1 whole chicken (about 4-5 lbs or 1.8-2.3 kg)
- 2 tbsp olive oil or melted butter
- 1 lemon, halved
- 4 cloves garlic, crushed
- 1-2 sprigs fresh rosemary
- 1-2 sprigs fresh thyme
- Salt and black pepper, to taste
- 1 onion, cut into large wedges (optional, for extra flavor)
- 1 cup chicken broth (for basting, optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels to help the skin get crispy.
- Rub the entire chicken with olive oil or melted butter, then season generously with salt and black pepper.
- Stuff the chicken cavity with lemon halves, garlic cloves, rosemary, and thyme for added flavor.
- Place the chicken in a roasting pan or baking dish, breast side up. Optionally, add onion wedges around the chicken.
- Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced between the leg and thigh.
- If desired, baste the chicken occasionally with chicken broth to keep it moist.
- Let the chicken rest for 10 minutes before carving to allow the juices to redistribute.
