Paella is a traditional Spanish dish that originates from the Valencia region. Known for its vibrant flavors and colorful presentation, this seafood paella combines rice, chicken, and an array of fresh seafood, making it a perfect centerpiece for any gathering. Whether you're hosting a family dinner or a festive celebration, this easy-to-follow recipe will transport your taste buds straight to Spain.

Ingredients:

  • 2 cups rice
  • 1 lb bone-in, skin-on chicken thighs
  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 lb mussels, cleaned and debearded
  • 1/2 lb clams, scrubbed and cleaned
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tomato, grated
  • 1/2 cup green beans, cut into 1-inch pieces
  • 1 teaspoon saffron threads, soaked in warm water
  • 1 teaspoon smoked paprika
  • 1 lemon, cut into wedges
  • 4 cups chicken broth
  • 1/4 cup chopped flat-leaf parsley
  • Olive oil, for cooking
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients: Season the chicken with salt, pepper, and smoked paprika. Soak saffron threads in warm water. Clean and prepare the shrimp, mussels, and clams.
  2. Heat the Pan: Heat olive oil in a large paella pan or wide skillet over medium-high heat.
  3. Sear the Chicken: Brown the chicken pieces until golden on all sides. Remove and set aside.
  4. Sauté Aromatics: In the same pan, sauté the onions, garlic, and red bell pepper until softened.
  5. Cook the Rice: Stir in the rice, cooking for 2-3 minutes until it is well-coated and slightly toasted.
  6. Add Liquids and Seasonings: Pour in the chicken broth, grated tomato, saffron (with its soaking water), and smoked paprika. Stir to combine. Nestle the seared chicken back into the rice mixture. Arrange the shrimp, mussels, clams, and green beans evenly over the rice.
  7. Simmer: Reduce the heat to medium-low and let the paella simmer for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  8. Rest: Once cooked, remove from heat, cover with a kitchen towel, and let it rest for 5 minutes to allow flavors to meld.
  9. Serve: Garnish with lemon wedges and chopped parsley. Enjoy!

Pro Tips:

  • Use a paella pan for even cooking and an authentic presentation.
  • Add seafood near the end of cooking to prevent overcooking.
