Creamy Lemon Squares |
This zesty and creamy dessert is perfect for any occasion!
Ingredients
For the Crust
- 4 tablespoons butter, melted and cooled, plus more for pan
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
For the Filling
- 2 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup fresh lemon juice (about 3 lemons)
Instructions
To Make the Crust
- Preheat oven to 350°F / 180°C.
- Brush a square baking dish with melted butter.
- Crush graham crackers, then add sugar and butter, and blend until mixed.
- Press the mixture into the bottom of the prepared pan.
- Bake until lightly browned, 8 to 12 minutes.
- Let the crust cool for 30 minutes.
To Make the Filling
- In a large bowl, whisk together egg yolks and condensed milk.
- Add lemon juice and whisk until smooth.
- Pour the filling into the cooled crust and carefully spread it to the edges.
- Bake until set, about 15 minutes.
- Cool the dish on a rack and chill for at least 1 hour before serving.
Tips
- For a thicker crust, increase the amount of graham cracker crumbs by 1/2 cup.
- To enhance the lemon flavor, add a teaspoon of lemon zest to the filling.
- Chill the lemon squares overnight for an even firmer texture.
