Creamy Lemon Squares


This zesty and creamy dessert is perfect for any occasion!

Ingredients

For the Crust

  • 4 tablespoons butter, melted and cooled, plus more for pan
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar

For the Filling

  • 2 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 3 lemons)

Instructions

To Make the Crust

  1. Preheat oven to 350°F / 180°C.
  2. Brush a square baking dish with melted butter.
  3. Crush graham crackers, then add sugar and butter, and blend until mixed.
  4. Press the mixture into the bottom of the prepared pan.
  5. Bake until lightly browned, 8 to 12 minutes.
  6. Let the crust cool for 30 minutes.

To Make the Filling

  1. In a large bowl, whisk together egg yolks and condensed milk.
  2. Add lemon juice and whisk until smooth.
  3. Pour the filling into the cooled crust and carefully spread it to the edges.
  4. Bake until set, about 15 minutes.
  5. Cool the dish on a rack and chill for at least 1 hour before serving.

Tips

  • For a thicker crust, increase the amount of graham cracker crumbs by 1/2 cup.
  • To enhance the lemon flavor, add a teaspoon of lemon zest to the filling.
  • Chill the lemon squares overnight for an even firmer texture.
