What You'll Need
For the Salad:- 500g/1 lb green beans, ends trimmed and cut into 5cm/2" pieces
- 3 tomatoes, cut into thin wedges
- 1 large avocado (or 2 medium), diced into 1.5cm/2/3" pieces
- 1/2 red capsicum/bell pepper, diced
- 1/2 red onion, finely diced
For the Creamy Avocado Dressing
- 1/2 cup ripe avocado (smush into cup to measure, or estimate - 1/2 medium avocado)
- 3 tbsp extra virgin olive oil
- 3 tbsp sour cream or yogurt (Greek or plain, unsweetened) - OPTIONAL
- 2 tbsp lemon juice
- 1 small garlic clove, minced using a garlic crusher
- 4 tbsp water (to thin out)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Prepare the Dressing: Combine all dressing ingredients in a Nutribullet or small food processor and blitz until smooth. Adjust consistency with water to achieve a pourable, not gloopy, texture. Taste and adjust seasonings as needed.
- Cook the Green Beans: Steam the green beans until soft (approximately 5 minutes in the microwave on high). Drain and allow to cool.
- Assemble the Salad: In a large bowl, combine the cooked green beans, tomatoes, avocado, capsicum, and red onion. Drizzle with half of the dressing and toss to coat.
- Serve and Enjoy: Serve the salad with the remaining dressing on the side. For a visually appealing presentation, drizzle the avocado dressing over the salad just before serving.

- If you don't have fresh garlic, use 1/4 tsp of garlic powder instead.
