  • 1/2 cup ripe avocado (smush into cup to measure, or estimate - 1/2 medium avocado)
  • 3 tbsp extra virgin olive oil
  • 3 tbsp sour cream or yogurt (Greek or plain, unsweetened) - OPTIONAL
  • 2 tbsp lemon juice
  • 1 small garlic clove, minced using a garlic crusher
  • 4 tbsp water (to thin out)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  1. Prepare the Dressing: Combine all dressing ingredients in a Nutribullet or small food processor and blitz until smooth. Adjust consistency with water to achieve a pourable, not gloopy, texture. Taste and adjust seasonings as needed.
  2. Cook the Green Beans: Steam the green beans until soft (approximately 5 minutes in the microwave on high). Drain and allow to cool.
  3. Assemble the Salad: In a large bowl, combine the cooked green beans, tomatoes, avocado, capsicum, and red onion. Drizzle with half of the dressing and toss to coat.
  4. Serve and Enjoy: Serve the salad with the remaining dressing on the side. For a visually appealing presentation, drizzle the avocado dressing over the salad just before serving.
