Introduction
Trifle is one of the delightful traditional desserts that embody the spirit of holidays and family gatherings. This dessert is distinguished by its multiple layers, combining rich cream, fresh fruits, and soaked cake, making it a visual and gustatory delight. Ingredients
For the Red Fruit
- 500g (1 lb 2 oz) of frozen red berries, such as raspberries, blackberries, and blueberries
- 50g (1¾ oz) of caster sugar
- 1 heaped tbsp of cornflour (cornstarch)
For the Trifle
- 250g (9 oz) of full-fat mascarpone
- 600ml (21 fl oz) of double cream
- 6 tbsp of icing sugar
- 1 tbsp of vanilla extract
- 450ml (16 fl oz) of strong coffee
- 40ml (1½ fl oz) of brandy
- 12 trifle sponges, halved through the middle to make 24 pieces
- 100g (3½ oz) of plain chocolate, coarsely grated
Method
To Prepare the Red Fruit:
- Heat the frozen berries and caster sugar in a saucepan over medium heat, stirring until the sugar dissolves and the berries start to defrost.
- Sieve the fruit over a bowl (do not press the berries, leave them whole). Pour the fruit liquid back into the saucepan.
- Mix the cornflour with 2 tablespoons of cold water in a small bowl until smooth. Add to the pan and mix together.
- Stir over medium heat until boiling and thickened, and the sauce coats the back of a spoon. Add the whole fruit back to the saucepan. Set aside to cool completely.
To Prepare the Trifle:
- In a large bowl, place the mascarpone, cream, sugar, and vanilla. Whisk together using an electric whisk until light, soft peaks form – be careful not to over-whisk.
- Mix the coffee and brandy together in a shallow dish.
- Soak half of the sponge pieces in the coffee mixture. Arrange them tightly over the base of a glass dish.
- Spread one-third of the cream mixture on top and sprinkle with half of the grated chocolate.
- Spoon all the berries on top in an even layer.
- Soak the remaining sponge pieces in coffee and brandy and arrange them on top in another layer.
- Spread half of the remaining cream mixture on top and sprinkle over the remaining chocolate.
- Spoon the remaining cream mixture into a piping bag fitted with a 1cm (½ in) plain nozzle. Pipe 12 blobs on top around the edge of the trifle.
- Chill for 1–2 hours before serving.
Additional Tips:
- You can use a mix of frozen or fresh fruits depending on availability and season.
- To ensure the cream sets well, make sure all the ingredients are cold before whisking.
- You can substitute brandy with orange juice or milk if you prefer to avoid alcohol.
